Palace is thrilled to present "Mesfin," our latest single origin coffee offering that promises a journey of extraordinary flavors. This exquisite coffee originates from the Odo Shakiso Kebele in the Guji Woreda of the Oromia region, Ethiopia, and is a testament to the expert craftsmanship of its producer, Mr. Mesfin.
A Tapestry of Flavors
"Mesfin" is not just a coffee; it's an exploration of taste. Cultivated at elevations ranging from 1750 to 2050 meters, this heirloom variety captures the essence of its terroir. It offers a delightful fusion of lemon-lime soda zest and subtle floral undertones – a vibrant and refreshing profile that entices you to savor every sip. Innovative Yeast Processing
The distinct character of "Mesfin" comes from its innovative yeast processing, using the Intense yeast type. This process begins with the meticulous selection of the finest red cherries. During pulping, clean water is utilized to maintain the mucilage, essential as it nourishes the yeast. The cherries are then fermented in a tank, with yeast added in a carefully measured 1:160 ratio to the green coffee. This precise fermentation process ensures a uniform and thorough development of the coffee's intrinsic flavors.
Artisanal Drying Techniques
After 72 hours of fermentation, the beans are washed gently and dried on African beds for 16 days. This artisanal drying method is crucial for achieving the optimal moisture content, sealing in the unique flavor profile of "Mesfin." Harvested with Care The harvesting period, spanning November to December, is a critical phase where precision and care come together to ensure each bean contributes to the outstanding quality of this coffee.
