Introducing Ibis Garcia: A Coffee grown at La Joya
We are delighted to present Ibis Garcia, a remarkable coffee from Finca La Joya, located in the San Fernando mountains of the Nueva Segovia region in Nicaragua. This family-run farm, near the border with Honduras, has a rich history of coffee cultivation spanning over 100 years, now managed by the fourth-generation coffee farmer and certified Q-grader, Ibis.
A Natural Haven
Finca La Joya is set in rugged, mountainous terrain that has largely been left in its natural state. The lush pine forest provides a sanctuary for native wildlife, including monkeys and other animals, creating a biodiverse environment that supports sustainable farming practices. In addition to coffee, the farm also cultivates elephant ear plants, bananas, flowers, and oranges.
Natural Processing Method
La Joya undergoes the Natural process, a traditional sun-drying method. Here's how it works:
- Harvesting: Coffee cherries are carefully handpicked from the trees.
- Floating and Sorting: The cherries are floated in water to remove any that are not up to standard.
- Sun-Drying: The selected cherries are then spread out to dry under the sun. This process involves drying the cherries whole, without using water for washing or machines for de-pulping, preserving the cherries in their most natural state.
