We're excited to welcome back Finca La Unica to our lineup at Palace. This exceptional coffee comes from the lush hills of Copan, Honduras, and marks our fourth year of partnership with Finca Terrerito, the sister farm of Finca La Unica.
A Legacy of Tradition
Managed by Leticia and her husband, Harry Hutchins, Finca La Unica is a testament to Leticia's deep-rooted passion for coffee, a tradition passed down from her father, Adelmo Lopez. Located at 1,400 meters above sea level, the 50-acre farm is home to rare micro-lots that reflect the family's dedication to quality.
Honey Processed Perfection
While the honey process is a common method in coffee production, Finca La Unica's approach brings out the best in this technique. The result is a coffee that's smooth and balanced, with a medium silky body and notes of natural chocolates, citrus, and hints of fermented cherries. It's a clean, consistent cup that shines both as a filter brew and an espresso.
Empowerment and Sustainability
Leticia's work at Finca La Unica goes beyond coffee-it's about empowerment and sustainable practices. In 2023, Finca La Unica partnered with the Matiak Foundation to bring clean water to rural villages, beginning with El Caltatato, a village less than 2km from Finca Terrerito. Before the project, families faced unsafe drinking water and the burden of buying bottled water or traveling long distances for cleaner sources. The clean water project, which broke ground in October 2023 and was completed in April 2024, has transformed lives by providing safe, accessible water directly to the community.
