Introducing Los Japoneses:

We are excited to present Los Japoneses, a unique coffee from Finca Los Alisos
in Quilanga, Loja, Ecuador. Managed by father and son duo Vicente and Miguel
Japon, this farm spans 3 hectares at an elevation of 1,950 meters above sea
level, growing varieties like San Salvador, Yel Quilanga, Loja,low Bourbon, and traditional Typica.

From Tradition to Specialty:
Vicente Japon, a long-time coffee producer, initially focused on low-grade naturals.
However, his son Miguel saw the potential in specialty coffee and invested in new
processing techniques. With the addition of a de-pulper and government-provided
technical assistance, they shifted to producing high-quality washed coffees.

Meticulous Processing:
Los Japoneses is a washed blend of San Salvador, Yellow Bourbon, and Typica.
The process involves picking ripe cherries, fermenting them for 24 hours, de-
pulping, followed by another 48-hour fermentation, and finally drying the coffee for
12-15 days.

Sustainable Practices:
Finca Los Alisos practices sustainable farming, growing coffee under Alder tree
shade and cultivating other crops like bananas, yuca, and corn. This approach
ensures a balanced ecosystem and high-quality coffee production.
