Pendi Gayo - Feature coffee

Palace is excited to bring you Gayo Pendi, our second Sumatran coffee release in the past year, and a truly special offering. This natural processed coffee comes from the farm of Pendi in Kute Panang, Sumatra, situated at 1,500 meters above sea level. Unlike the widely adopted wet-hulled (giling basah) process typical in Indonesia, Pendi has embraced the natural process for this lot of Ateng Super green coffee. This method brings out complex flavors and a variety of fruit notes, all wrapped in a syrupy body, making it a rare find from this region.

The Ateng Super varietal, with roots tracing back to the Timor Hybrid, is known for its small stature and high yield. Originating from a single dwarf tree in Aceh Tengah, this varietal stands out for its rapid production cycle, allowing farmers to quickly recoup investments.

Sumatra's coffee story began in the 17th century with the Dutch East Indi Company. Today, the island's diverse tropical environment supports small farms that contribute to its unique coffee offerings. Despite the challenges posed by Indonesia's humid climate, which complicates the natural drying process, Pendi's dedication ensures that the cherries dry evenly over three to four weeks, avoiding mold and rot.

Sumatran coffee is meticulously graded, with the highest quality beans being triple- picked (Grade 1 TP) to ensure fewer than five defects per 300-gram sample. This rigorous attention to detail is evident in the exceptional quality of Gayo Pendi.
