ABOUT THIS COFFEE
We’re excited to introduce Java Rosita Anaerobic Natural, a distinctive coffee from Finca Rosita in the scenic Illimani community of Caranavi, Bolivia. Named in honor of family matriarch Rosa Angelica Aramayo, this coffee showcases both tradition and innovation.
About the Farm
Finca Rosita spans 32 hectares (that's nearly 80 acres) of coffee cultivation near the base of Illimani mountain — a 6,462-meter peak that provides vital water to nearby communities. The farm benefits from the region’s unique climate, where temperatures shift from below-freezing to tropical warmth, creating ideal conditions for growing vibrant, complex coffee.
The Process
This coffee is crafted using a meticulous anaerobic natural process. After harvest, cherries are sealed in oxygen-free tanks with airlocks to release CO2 while preventing oxygen from entering. Over 4 to 5 days, the beans ferment uniformly, with sugar content tracked using a brix meter. Once fermentation reaches a brix of 8, the cherries are dried for 20 to 25 days, depending on weather conditions. This process highlights sweet, fruit-forward flavors with added depth and complexity.
